Member Field Day at Everly Farms

During our visit to Everly farms, we will continue conversations about vineyard management, and start new conversations about winemaking. This session will focus on ripeness, an appropriate segue from the vineyard to the winery. While many of us believe we know when to pick, or when to ask our growers to pick, achieving the best balance of sugar and phenolic ripeness is a difficult decision. Join us to discuss how your choices affect your harvest’s sugar, acid, flavor, and tannin profile, plus how a winemaker can take advantage of each of those components in different wine styles.
